400 g Nomix gluten-free flour |
1 egg (large) |
50g melted butter (oil) |
90 g sugar (incl. vanilla) |
230 g water |
18 g yeast |
3 g salt |
Flavouring: lemon peel, pinch of nutmeg |
Sprinkling: almond flakes, poppy seeds |
How to prepare
Let the stirred dough stand for about 5 minutes and process it immediately afterwards. Roll pieces of the dough and create various shapes. The traditional shape in the Czech Republic is a rope knot, because we call them Judas buns. Place the shapes on a baking tray and let them rise ideally in a warm place (a tempered oven). Protect them well from going stale. Once risen (about 45 - 50 minutes strongly depending on the ambient temperature), smear them with the egg, and you can sprinkle them with the almond flakes or poppy seeds. Bake them at 160-170 °C for about 16-20 minutes depending on the size. Do not dry them out unnecessarily.
