Ingredients

275 g Nomix gluten-free flour
25 g fine buckwheat flour
40 g oil
155-160 g water
1 whipped egg (30 g for dough,
smear with the rest)
5 g salt
20 g sugar
12 g fresh yeast
Sprinkling: sesame, chia, poppy

How to prepare

Crumble the yeast into the warm water adding the remaining ingredients and knead the dough well. Let it stand for about 5 minutes and roll it into firm buns. Once formed, use your palm or a flat object to press the buns down. Let them rise for about 45 minutes (the ambient conditions play a big role here). Slightly smear their surface with the egg before baking and sprinkle them with the selected seeds. Preheat a standard oven at 200 °C and bake them for about 15 minutes. The amount of ingredients will suffice for 4 large buns.
