Sorghum is one of the delicious porridge ingredients. Sorghum is a long-cultivated crop originating inthe Northeastern Africa. Cultures dating as far as the ancient Egypt were already aware of it, and it continued to spread into the drier parts of all continents. The largest quantity is being cultivated in the USA nowadays. Depending on the species, sorghum is used for various technical purposes, sugar production or livestock feeding. Human diets include the eusorghum section of the species. It belongs among the top five most commonly cultivated dietary crops.

This naturally gluten-free crop is a source of protein, fibre, a whole host of important minerals and vitamins (B). Due to the phyto-nutrient content, its antioxidant and anti-inflammatory effects are being studied as well as its potential to reduce the risk of cancer or cardiovascular diseases.

Quinoa is also an ancient crop which was known to the Incas thousands of years ago. Nowadays it is being cultivated not only in the mountainous parts of the South American Andes but also in certain parts of Europe. Quinoa is classified as a pseudo-grain (similar to amaranth for instance). The analytical possibilities of the present day make it clear why it was held in such high regard by the Incas. Quinoa is commonly labelled as a super-food for its nutritional value. It is valued for its high vitamin content (higher than other grains) including all essential amino acids. It is also a rich source of magnesium, calcium, iron and zinc, vitamin B2, essential fatty acids and fibre. It has a delicious taste, it is easily digestible and naturally gluten-free.

Wholegrain rice, commonly known as natural rice in our country, is partially dehusked rice. Compared with the dehusked white rice, it retains far more B vitamins as well as more of the desirable minerals (iron, magnesium and phosphorus) and, of course, fibre.

The flaxseed flour is still an undervalued source of natural fibre with optimum ratio between the soluble and insoluble content. Not only does it support the digestive tract function, but it also helps lower the cholesterol level and stabilise blood sugar. It contains the essential omega-3 unsaturated fatty acids, quality protein, lignans and flax fitoestrogens with a positive effect on the immunity and cancer prevention.

This mix of naturally gluten-free ingredients complemented by some seeds and fresh fruit can be a perfect start to you day.
